Rainy Thursday Randomness

Another rainy day in Atlanta and I love it...

Today is Eric's appointment with the specialist so we will finally figure all this out.

Winner Winner Chicken Dinner




This is my FAVORITE dish from Carrabba's. Chicken Bryan...I change it up a bit but its delish!! And surprizing Eric LOVES it too!! It is not one of my more healthy dishes but sometimes we need a break!








A package of boneless skinless chicken breasts
kosher salt, to taste
fresh ground pepper, to taste
olive oil
4 ounces goat cheese
6 sun-dried tomatoes, chopped
2 4 tablespoons fresh basil, chopped
4 teaspoons onions, minced
4 teaspoons garlic, minced
8 tablespoons butter, divided
6 tablespoons white wine
1/2 cup fresh lemon juice (about 1 large lemon's worth)
Directions:
1 Brush chicken on both sides with olive oil, season to taste with Kosher salt and cracked pepper.
2 Grill chicken until done (internal temp of 165F) - prepare lemon butter sauce while chicken is grilling.
3 Sautee onion and garlic in 2 Tbps butter until soft and fragrant.
4 Add white wine and lemon juice, reduce heat to medium-low and simmer 10 minutes to reduce.
5 Add remaining 6 Tbsp butter, a little at a time, until it melts and mixture is emulsified.
6 Add chopped sun-dried tomatoes and basil, heat until hot (but do not overheat or sauce may break).
7 Top nearly-done chicken breasts with 2 oz each of the goat cheese until cheese warms and softens.
8 To serve, spoon lemon butter sauce over chicken breasts.
9 Enjoy! I serve this dish with pasta tossed in butter or olive oil (the delicious lemon butter sauce will perfect it), garlic mashed potatoes and a green salad -- yummmm!

*** UPDATE FIRST**** THANK GOD...ITS NOT CANCER!!! He does have an autoimmune disease and we will see the specialist about all this on Thursday. I'm just on cloud nine that it wasn't the C word!!

In the works with some of our closest friends planning a "Thank god its not cancer" party!!! Just to lift his spirits!


Today is a rainy day in Atlanta... I love this weather! And I dressed for this dreary day... grey skinny jeans, black flats, black fitted tee, gray Hang Ten sweater... my FAVORITE SWEATER AT THAT!

Prayers, Prayers, Prayers

My nerves are on edge here.... Eric's followup appointment is at 11:30 this morning in Atlanta... Unfortunately I am unable to get out of work but thankfully his parents are meeting him there. I literally feel like my heart is beating out of my chest...



Please pray that he has good results and that he is healthy!








I don't know if I didn't have this wonderful man in my life. He is my heart.

IS IT 5 O'CLOCK YET???

TGIF.... its been a loooooooog week for us!

No word back yet on Eric... I have to call to confirm his follow up appointment for Monday so hopefully well have news late this afternoon. Prayers needed!

Plans for my weekend....

After work run home real quick to pick up Vinny and Miss Sophie





then headed to my Brother and Sister-in-laws to babysit my sweet little Nephew, Raymes! PS he is obsessed with Sophie and now especially Vinny! This should be fun.
Then home = SLEEP.

Tomorrow I really want to go to some sort of fair or festival!! Possibly Taste of Suwanee, went last year it was so much fun! Oh and of course FOOTBALL!!

Sunday Eric is off, we talked about going out to Stone Mountain for the day! Then of course we have our weekly "fam din"... this is a weekly dinner we have with our 3 best friends...

What changes in 1 short year....

Well I'm back... Its been 1 year since I blogged... and not that I was a dedicated blogger before but I will make a much better effort this time around.
So let me let you in our past 12 months...

Eric and I got engaged on my birthday 11-17-2010 *

We plan the wedding, look for places and new jobs in our new area from December to June

Eric and I moved into our first home 06-01-2011 *

I finally got my Insurance license and the job I wanted 06-15-2011

Eric and I GOT MARRIED 09-03-2011 *

We added a member to our family... no not what your thinking... A kitten, Vinny 10-01-2011

And currently in our first month of marriage we are facing a health scare with Eric.

That's alot in one year...
I promise to get back to the engagement, the house, the WEDDING, the kitty and all things exciting but right now I want to focus more on my husband and his health. Which is what encouraged me to blog again. I thought maybe an outlet. I have to be so strong in front of him and everyone else. Here I can be weak, sad, hurt, angry... just me and whatever I am feeling.

So it started about 1 week before the wedding he had a lump on the back of his head… we just kept in eye on it. But then about a week after the wedding it was starting to hurt. We had his mom look at it (she’s a nurse) she was really concerned with it and said he needed to go to the ER right then… of course being a guy…he wouldn’t… so he and I went home talked about it and he decided he would go the next day. Because he has lost an extreme amount of weight, I'm talking 40 pounds in a few months! He is having night sweats, the lump and over all just does not feel well. So he and his Dad went to Gwinnett medical… they couldn’t tell him what it was, they said they thought it was an inner ear infection. BS… he had no pain in his ears, no drainage… and they said but we can’t explain the bump. So the next day we had him see a family doctor who did some blood work but also could not explain the lump and suggested we see a specialist. So last Monday we got him in with an advanced ENT and they also did blood work. they sent the blood work out… still waiting on those results and in the meantime he had another appointment with a specialist on Friday who did a biopsy on the lump…. Also waiting to hear back on that. But they told us it’s a 50/50 chance its Lymphoma (cancer) or Lyme Disease. (also his Dad has Lymphoma… so higher chance that’s what it is). They said we could hear something back as early as yesterday… but we didn’t so hoping today… His CAT scan is scheduled for next Monday. Waiting and not knowing…. I don’t even know what to do. I feel terrible for him… he is so scared, I’m so scared not knowing what’s going to happen… I am just hoping they are wrong and maybe it’s just some freak infection that can be treated. But we just wait...
